In attempting to fix a problem with exchange and a user iphone I deleted his user from AD. In recreating him it did not use the same profile so now all his his stuff is gone and now it's a fresh start when he logs in. I found his old profile and everything is there. Is there a way to point to his old profile so when he logs in he gets his old desktop and files back?

I think you mean his old profile in the local  c: drive?  login as an admin, and set the permissions for his entire old profile so he has full control of it and just copy desktop, etc it over to the new one

How about outlook? it is asking to create an account. Will it just pull down the email and contacts from exchange?

am not sure but there is away to recover delete active directory users , because every user have its own security ID by AD .. see here :

delete the current user and restore the old one , it will work.

Was his exchange mailbox delketed too?  usually exchange will save the box for 30 days after a user is deleted from AD, if its still there, all inbox, GAL's etc will be there.  But you can get his Personal folders and OST (if you were using a cached version) from the local profile folder on the c drive.  You first need to enable hidden folders...then c, docs and settings, user folder, local settings, App data, Microsoft, outlook

you can reconnect a user to an exchange box...as long as it's still there.  If it's not, i reccomend changing your settings in exchange to keep the box for "x" ammount of days after a user is removed.

I've got the exchange thing figured out. Following the restore deleted user is were im stuck now because I see he has been deleted a few times before so how do I know which is the correct one to restore?

Ok i found the correct one but i get an error when i try to restore. I think this is because the DN is the same for all of the deleted users of course because it is. So how would I choose the correct one? The criteria I enter to return the deleted use is the DN but if all are the same....??
